Fukumaru rice's most distinctive quality is the large grains. In order to preserve this quality and the texture it creates, strict standards for grain size are set. Only grains of 2mm or more are shipped as Fukumaru rice, compared to the 1.85mm of other rice. This larger grain size is prized by top chefs and rice connoisseur around the world. Compared to Koshihikari, Fukumaru has almost the same physical characteristic after cooking but retains moisture better. Even after 24 hours, Fukumaru rice is as delicious as when it was freshly made.
