Niigata Prefecture is Japan's largest producer of Koshihikari rice. The vast Echigo Plain, along with the Shinano River that feeds it and rivers such as the Agano River, create ideal conditions for its production.
The nutritious snowmelt water gives the rice a delicious taste, as does the vinegar. In summer, the sunshine hours are long and there is little rainfall; this activates and promotes the production of delicious rice.
"Koshihikari": Rice characterized by its firm sweetness and stickiness, it is delicious. It is the most produced rice in Japan. Koshihikari rice from Niigata Prefecture, which is synonymous with "delicious rice," is one of the best in the world.
